El Salvador Las Isabellas Coffee – Pacamara & Bourbon

Grown on the south-facing slopes of Cerrón Grande in the Apaneca region of western El Salvador, this coffee comes from Las Isabellas farm, where altitudes range from 1200 to 1450 metres. The farm spans land rich in natural forest, with springs and waterfalls running through it, creating a setting where coffee grows alongside thriving ecosystems. Owned and managed by Jose Roberto Santamaria, Las Isabellas is a Rainforest Alliance certified farm and part of the Blue Harvest project, which supports sustainable farming and protects vital water sources. Through water-smart practices and careful land management, this crafted coffee reflects both the character of its landscape and a commitment to long-term environmental care.

Coffee Growing Conditions in Apaneca, El Salvador

  • Region: Apaneca, western El Salvador
  • Altitude: 1200–1450 metres above sea level
  • Varietals: Pacamara and Bourbon
  • Environment: Mountainous terrain with forest cover, natural springs, and waterfalls
  • Farming Approach: Rainforest Alliance certified, with focus on sustainable land and water use
  • Water Management: Blue Harvest project promotes soil health, water conservation, and clean processing methods

Coffee grown at these elevations develops more slowly, which helps build depth of flavour and balance. The combination of fertile soils, shade from forest cover, and steady water supply from natural springs supports consistent quality. Programmes like Blue Harvest also improve soil condition and water retention, which helps farms stay productive while protecting local water sources for surrounding communities.

Tasting Notes – Plum and Chocolate

This is a sweet, mild coffee with a smooth and easy character. You will notice soft notes of ripe plum, bringing a gentle fruit sweetness that feels rounded rather than sharp. Alongside this, chocolate flavours come through with a comforting richness, adding depth without overpowering the cup. The balance between fruit and cocoa creates a clean, satisfying finish that lingers without heaviness, making it an easy choice for everyday drinking.
